Look, I’m not even going to review last week – it was PITFUL. I think we ate “on plan” once. I know Christmas is a crazy busy time of year, but pull it together H!
So, moving forward with this week, I feel it’s essential for me to try and look a bit closer at what I have on and plan/prep ahead so I don’t fall into the trap of takeaways or grab and go meals.
Monday :: Chicken, Bacon and Leek cottage pie
A recipe I really wanted to try last week but never ended up doing – I’m giving it a go tonight because it’s going to be lush and I already bought all of the stuff. Bonus might be that there will be leftovers for lunch, though the way the kids have been eating lately, probably not. From Tesco Food.
Tuesday :: Chicken Tikka Masala (slow cooker)
This slow cooker edition tikka masala will be ideal for Tuesday because I have eye test appointments for both boys AND a school play to attend – there will be about 20mins to eat and get gone! From Taming twins.
Wednesday :: Hearty veg soup
I can FEEL the complaints coming off this one, truly I can, but I really feel like we need an injection of decent veg and this is the easiest and quickest way to get it. I will give them loads of bread to soften the blow. From Slimming Eats.
Thursday :: Chilli con carne
I’m batch cooking it so that I can do some for lunches etc either next week or even a jacket potato lunch one day!
Friday :: Veg Lasagne
I can sense that there will be mucho complaining about this but HONESTLY it needs to be done and it really is better than regular lasagne. Reuben agrees with me. Toby… is on the fence, Edith and Adam maintain I’m poisoning them and ruining an amazing dish. From Family Style Food.

Sunday :: Green Thai curry
It will just be a shop bought paste but I think this is a nice refreshing dinner that I know will do for Monday lunch boxes!
