This is my middle child, he’s a little chef, and loves cooking just as much as his mummy!
His request today was to make vegan brownies. ♡
Ingredients:
5 tablespoons coconut oil
200 g dark chocolate
170 g self-raising flour
3 heaped teaspoons cocoa powder
180 g golden caster sugar
a pinch of sea salt
1 and 1/2 teaspoons of vanilla extract
230 ml oat milk
Directions:
Preheat the oven to 180ºC, and line or grease a square baking tin with a little dairy free butter or greaseproof paper.
Melt the chocolate in a heatproof bowl over a pan of simmering water, don’t let the bowl touch the water. Break about 3/4 of the chocolate into the bowl and allow it to melt, then take off the heat once melted.
Meanwhile, sieve the flour and cocoa powder into a large bowl, then stir in the sugar and salt. Once that is all mixed in nicely, stir in the oil, vanilla, oat milk and melted chocolate until it’s smooth.
Chop and mix in the remaining chocolate, the pour the mixture into the lined tin, making sure it’s even. Then pop into the hot oven for 20 to 25 minutes, or until cooked on the outside, but still gooey in the middle.
Leave to cool for about 5 minutes, then serve while still warm!

These sound lovely! As I am pre-diabetic, I don’t cook with flour or sugar, so would substitute with ground almonds and Erythritol. Not difficult for most cakes and biscuits, so I’ll enjoy baking these x
